La Fassona

Culinary excellence.

Fassona Piemontese is a gastronomic delicacy, widely used in our preparations, from raw meats to hamburgers, and from cuts to “Ugly and Good.” This breed, a flagship of Made in Italy, is appreciated worldwide for its tenderness, leanness and delicate taste.

Here are the distinguishing characteristics of Fassona meat:

Exceptional tenderness: Fassona Piemontese is known for its extraordinary tenderness. The connective texture of the muscle tissue is reduced, making the meat pleasantly tender.

Higher leanness: In some cuts, the fat content is less than 2%. The few fats present are of the highest quality. Scientific analyses have shown that this meat is close to fish in the ratio of beneficial unsaturated fatty acids (omega-3 and omega-6) to saturated fat.

Breeding and feeding: Fassona Piemontese follows strict production specifications. Feeding is based on forages and cereals. In some cases, mountain grazing is practiced, with the herd being moved to the mountains during the summer months.

As healthy as fish: Thanks to a natural genetic mutation, this meat is tender yet incredibly lean. The fat content is minimal, making it a healthy and tasty choice.
